The “Mediterranean Diet” of Ansel Keys (1904-2004) was popularized in the 1960’s. Wilbur Atwater had determined the 2,000 calories needed daily; Thomas Osborne had determined the essential amino acids.
Today, the biochemistry’ of nutrition is known and diets such as the “Mediterranean Diet” are different culinary art approaches. Cooking is art, and not science.
