INTRODUCTION.
Paul Greenberg, stated that “just as their are four (4) meats (beef, pork, mutton, goat); and their are four (4) birds (chicken, turkey, duck, goose) — their are four (4) fishes in cookery.
Paul Greenberg’s statement is accurate today; however, Ziemann-Gillette in 1887 of “The White House Cookbook”, presented four (4) meats (beef, pork, mutton, venison).

COMMENTS.
Venison has not been overtaken by Goat in the cookery of the United States in the 21st century. Only 0.25 pound of Goat is eaten per capita annually in the United States
Ranking from one (1) to four (4) we have the American annual per capita meat consumption:
#1. Beef 54 pounds.
#2. Pork 50 pounds.
#3. Sheep 1 pound.
#4. Venison 1 pound.
Venison is one of the four (4) meats, in contrast to what Paul Greenberg stated in his book.
Venison is “game meat” term that includes: 1. Deer, 2. Elk, 3. Antelope, 4. Moose.
