Here I present: Hugo ZIEMANN & Fanny Lemira GILLETTE, “White House Cookbook”, 1887.
SUMMARY.
The book of Ziemann & Gillette, “White House Cookbook”, 1887 is one of the most collectible cookbook I am aware of.
The foods are quite American; and, the four (4) meats it spotlights are: beef, pork, mutton and lamb. The beef, pork, mutton , and lamb pages from the book are shown BELOW.

COMMENTS.
The table is the current American consumption per capita of MEAT, BIRDS & FISHES. Americans eat one-hundred-five (105) pounds of both MEAT & BIRDS. The FISHES consumption is sixteen (16) pounds per year. FISHES consumption is equal to the TURKEY’ consumption at sixteen (16) pounds per year. TURKEY’ is the American national bird.
Hugo ZIEMANN & Fanny Lemira GILLETTE, “White House Cookbook”, 1887 is the reference I choose for the meat preferences of Americans; and, today in 2023 these meat preferences continue. Americans alternate between MEAT and BIRDS as main dish; and, Americans have on holidays FISHES or TURKEY.
