August Krogh (1884-1949), “The Respiratory Exchange of Animals and Man”, 1916 was a nonfiction science book about the exchange of “molecular oxygen O2, for carbon dioxide CO2 in blood capillaries. August Krogh, four years later in 1920 became a Nobel Prize laureate for contributions to “The Anatomy and Physiology of Capillaries”. August Krogh, along with Wilbur Atwater and Otto Warburg are foundational contributors to”respiratory exchange calorimetry”. Calories and calorimetry using “respiratory exchange” are fundamental in biochemistry, and food science.
