Marcus Samuelsson is a chef who has as his signature dish “fried whole chicken” (shown below). Samuelsson is Ethiopian-born & raised in Sweden. As “New African” and not “African-American”, Marcus Samuelsson goes to the core of “African-American” soul food dish…as his “signature recipe” (Southern Fried Chicken).
“Cornish Hen” is a chicken that weighs just over 1 pound. The “Capon” is a chicken that weighs about 10 pounds. “Fried Whole Chicken” that varies from 1 to 10 pounds give Marcus Samuelsson variation in what he places on the dinning table.
