

Edward Lee, “Smoke and Pickles: Recipes and Stories from a New Southern Kitchen”, 2013 was the topic of an earlier blog post.
Here I present: Marcus Bawdon, “BBQ For All”, 2023. This is a cookbook for cooking outdoors over fire. Marcus Bawdon like many chefs considers “smoke” to be the zeroth (#0) taste.

OPINION.
Everyone tends to agree that there are five (5) basic taste.
- Salty taste.
- Sweet taste.
- Sour taste.
- Bitter taste.
- Savory taste (umami).
Marcus Bawdon and Edward Lee are among chefs that cook from the viewpoint of “smoke taste” as the zeroth (#0) taste. I find the cookery of these two (2) chefs amazingly interesting, and there cookbooks are highly regarded.
My favorite recipe from Marcus Bawdon, “BBQ For All”, 2023 was the “Beef Lindstrom (NORWAY) Burgers”, on page 128. The burger patties are beetroot and ground-beef mixtures that absorbs smoke well when grilled (shown BELOW).
