“Artichauts aux petits pois” (Artichokes with Peas) is a recipe that I show in several different photographs in this blog post. Pairing of “English Green Peas” with either “Hearts” or “Palms” of Artichoke is greater than the sum of the parts. The contrast of artichoke and peas “plates” well in serving dish for the eater.
Shannon Smith, “The Classic Artichoke Cookbook”, 2021 has on page 80 a “Artichokes & Green Beans” recipe. Shannon Smith, on page 18 has a “Asparagus & Artichoke Pasta Salad” recipe. Green beans are an “everyday” vegetable: but, artichoke or asparagus is used as a “holiday” vegetable. “Surf & turf”, is filet mignon beef & lobster with asparagus. “Surf & turf” dinner replacing the asparagus with artichoke is equally as “elegant” meal.
