INTRODUCTION.

This cookbook is a collection of recipes (the first recipe is shown BELOW).   The “table of contents” follows recipe “Cake California” BENEATH.

COMMENTS.

Why “California” California cuisine is a food movement; and it is a different term than Cuisines of California.

Climate
is what makes “California” unique to food production.  A “Mediterranean climate” is what “California” has going for it.  Besides “California”, four (4) other regions have “Mediterranean climate”.  The other four (4) are: Chile, South Africa, Australia & the Mediterranean Basin.  

The “Mediterranean Basin” consists of three (3) continents  (Europe, Asia, Africa).  “California” is only one (1) of the fifty (50) states of the USA.  This small area of Earth is blessed with “Mediterranean climate” making California the greatest Economic center in history.  The recipes in the cookbook are a “melting pot” of everywhere on Earth of people drawn to “California”.
