Here I present:  Madhur Jaffrey’s मधुर जाफरी, “Step-by-Step Cooking: Over 150 dishes from India & the Far East”, 2000  a cookbook by the Indo-American Television chef.  

Madhur Jaffrey has a cookbook of recipes from nine Far East countries (alphabetical order): Hong Kong, India, Indonesia, Japan, Korea, Malaysia, Philippines, Thailand & Vietnam. 

Think of India & China as a dichotomy of two “culinary zones” (to understand this diverse collection of 150 different recipes).  

1. “India zone” is: India, Thailand, Malaysia & Indonesia is a Hindu diaspora. 

2. “China zone” is: Hong Kong, Vietnam, Korea, Philippines & Japan is a Buddhist   diaspora.   

Above is the “Menu” specific for a given country using the recipes in Madhur Jaffrey’s cookbook.  I can certainly say the two Japan menu are excellent. Cookery both geography and religion limits.  These recipes are Far East, which is “rice” everyday.

Here I presented: Madhur Jaffrey’s, “Step-by-Step Cooking: Over 150 dishes from India & the Far East”, 2000 a cookbook by the Indo-American Television chef.  I liked the Japan menu, as stated above.  The “Green Beans with Sesame Dressing” from Japan was my favorite recipe in the book.

On the map of the “Far East” (shown above) we see the spread of Hindu-limits on what foods Indian cookery can contain.  The Hindu-diaspora is diversely spread across Asian.  Madhur Jaffrey made sense of the place of Indian cookery in the Far East in this cookbook.
