INTRODUCTION.
The national dish of Iceland is hangikjöt (lamb leg) smoked in birch wood (shown ABOVE). Iceland is a large consumer of lamb after Mongolia & Turkmenistan (22 kg per capita annually). Iceland ranks among the lamb consuming nations; in contrast, to the United States (USA) consumption of only 0.5 kg per capita annually of lamb).

Gunnar Karl Gislason is the co-owner of the bistro-type restaurant “Kex” in Reykjavik, ICELAND. Gislason & Eddy, NORTH, 2014 is an interesting cookbook from the World cuisine viewpoint. This is a cookbook about the chef of the “Kex restaurant” in Reykjavik, Iceland restaurant (shown BELOW).
